docs: fix Lakebase references to say Autoscaling instead of Provisioned#232

The caching and architecture docs incorrectly referenced Lakebase V1 (Provisioned). The implementation uses Lakebase Autoscaling. Also added a link from the caching doc to the Lakebase plugin for env var config. Signed-off-by: Pawel Kosiec <pawel.kosiec@databricks.com>
